Gluten free, let alone paleo cookies tend to be soft or have a weird texture, which doesn’t work for me. I require cookies to be a bit crunchy, and a lot chewy. Add in a sweet and salty combo… you just cant go wrong with that.

We love honey in our house. Talin’s grandfather keeps bees which means we always have a jar of the good stuff on hand. Using honey as a sweetener allows these cookies to be free or refined sugar while also lending to the chewiness. These are so addictive! Maldon sea salt flakes are a gift from above and take these cookies to the next level.


Chewy, a little crispy, and perfectly sweet and salty cookies free of refined sugar.

Servings 8


  • 1 cup almond flour
  • 2 tbsp arrowroot powder
  • 1/4 tsp baking soda
  • 3 tbsp local honey
  • 1 tbsp coconut oil
  • 1 tsp vanilla
  • maldon sea salt flakes to top


  1. Preheat oven to 350. Melt the coconut oil and whisk in honey and vanilla.

  2. Add in the almond flour, arrowroot powder, baking soda. 

  3. Divide into 8 equal portions, form into balls, and flatten onto a parchment lined cookie sheet. Top with maldon sea salt flakes.

  4. Bake for 9 minutes.
